"Chocolate" Cherry Pie |

Crust; Blend Dates and Walnuts in food processor...1 part dates to 2 part walnuts. Press into a pie pan. Filling; In a food processor put in ripe avocados, pitted Medjool Dates (If available. If not, presoak some regular pitted dates with some water or fresh orange juice, or coconut water, etc...just enough to cover the dates to soften them), carob powder and vanilla. Blend well until pudding smooth. Add dried cherries into the pudding and pour into the crust. Topping; In a processor or blender, add cashews, fresh coconut water, vanilla and soft dates. (Optional; coconut extract, or lemon or try others..) Blend well. Spoon onto the top, garnish with berries or pomegranates, etc. Have fun and enjoy this rich, non-fattening dessert. Tastes even better after refrigeration...if it can get that far!!! Our first time attendee to Kitchen Fun, Kachina put this together for us and did a great job. Future Gourmet Chef coming...!! |
